About a month ago, I predicted that I would soon be making this cake, and, like a well-trained Kreskin, my prediction became manifest when I baked this mound of banana chocolate deliciousness for my very own birthday! Well, really it was a co-creation between me and my mom, due to it's complex nature. It is, by all accounts, mine included, a damn fine cake, but it is time consuming. (Just time consuming, not difficult.) It comes from the new Baked cookbook Baked Elements and it contains not one, not two, not three, by four different parts (cake, filling, icing, glaze). I recommend splitting it into two days or getting a co-baker/sous chef to help you out. I promise; It will be worth the effort. I mean, come on, it's banana + peanut butter + chocolate (squared). What's not to love??? Actually, it reminds me a lot of the peanut butter and banana sandwiches that I used to have as a kid (and sometimes as an adult), but, you know, with chocolate added. So good!

Sweet Testing: Peanut Butter Banana Cream Pie
I have had a craving for a Peanut Butter and Banana Creme Pie for a long time, ever since I first heard about it last year, so I was really happy when my father picked this as his dessert of choice during a recent visit. I was doubly happy when I searched the internet for a recipe and discovered that my favorite bakery, Baked, has their own version of this delicious treat! And let me tell you . . . it was soooo good!! I cheated a little bit and used a Whole Foods brand gluten-free pie crust, which I highly recommend for people with gluten allergies. Usually, I don't really care for store bought pie crust, but this one is a definite winner AND it's gluten free! So, because I wanted to make the pie edible for people with gluten allergies and because I was short on time, I didn't end of making the vanilla wafer crust that goes with this recipe, but I'm sure the pie would be even more amazing with that added element, although it was pretty damn good without it! For that reason, I can't really speak to the ease of the crust preparation, but the filling was super easy to assemble and came together quite quickly. Easy and a total crowd pleaser. What's better than that? (p.s. For Baked fans, another teaser video for the new cookbook
(p.p.s. Sometimes I feel like every recipe I make is from Baked. Someone seriously needs to hide their cookbooks from me!)
You can find the complete recipe after the jump.

Godiva Hearts, for People Who Insist on Celebrating Valentine's Day
Okay, I have two statements to make before I get to the chocolatey goodness section of this post.
Preface #1 - I think Valentine's Day is totally lame! I've always felt that way. Well, maybe not when I was in second grade, but I don't think I was waxing philosophical about holidays at that point. I was too busy fantasizing about Fred from Scooby Doo to worry about such things. I just don't understand why people put such importance on receiving a gift on Valentine's Day, especially when it's usually a gift that requires no brainpower, like candy, flowers, or stuffed bears. Oh, yea! My significant other bought me a gift not because they were thinking of me, but because their calender and the mall told them to! They must really love me! Not that I object to flowers or candy. I just object to them on February 14th!
Preface #2 - I think Godiva is, generally speaking, overrated. I know a lot of people will disagree with me on this point, but I kind of think Godiva is like Tiffanys, in that all you're really paying for is the name. Is that diamond/chocolate truffle any better than any other diamond/chocolate truffle or are we just wowed by the name on the box? Maybe you're one of those people who genuinely LOVE Godiva's candy. I know a lot of people that do, so it is possible that maybe I'm wrong about their chocolate! I've also, in the past, bought gifts at Tiffanys, so, you know, I understand the lure of the fancy. :-)
That said, I was at Godiva the other day and couldn't stop looking at this box of heart-shaped chocolates!

I know! I was shocked! They were so pretty and unique, which makes sense once I realized that they're designed by pastry chef Norman Love (awww . . . love). It also sounds like these little hearts are filled with some interesting flavors like Apple Pie, Bananas Foster, and Caramel Macchiato, which is always a good sign! Give them to someone for Valentine's Day, if you're into that sort of thing. My Favorite Dessert: Blueberry Banana Cream Pie by Pretty Ditty
I'm sooo excited! It's my first guest blog! And it's from Jamie from Pretty Ditty. Woo hoo! I recently discovered Jamie's gorgeous aprons on Etsy and I have to say they are among some of my favorite aprons, ever!
From the front, you could mistake them for really wonderful dresses. I know I've said that before, about other aprons, but the Pretty Ditty aprons really are so lovely! I want to wear one all day long! In addition to being a world-class apron maker, Jamie also has a blog where she shows off her many crafting skills, like making adorable pegs dolls like the one seen below. You can click here to visit Jamie's Etsy site and to see more of her charming aprons. Thanks, Jaime!
Here's what Jaime had to say about this recipe:
One of my favorite recipes to make is Blueberry Banana Cream Pie. This particular recipe was handed down to me by a very dear friend who moved much too far away from me. I love this recipe because 1) it's light and very delicious 2) very fast to make 3) it's EASY. Last week a made a dessert that took 3 HOURS to make . . . not cool.
Blueberry Banana Cream Pie
- 1 deep dish frozen pie crust (cook according to directions & let cool.
- Mix 1 cup of sugar with 8 ounces of cream cheese (set aside).
- Prepare 1 package of Dream Whip according to directions on the box.
- Combine sugar mixture with the Dream Whip.
- Layer pie crust with sliced bananas and then fill with cream mixture.
- Refrigerate overnight to set. (I must admit, I never refrigerate overnight. I usually refrigerate for 1 hour, because I'm never that prepared to pre-make the dessert any earlier.)
- Serve it with blueberry pie filling on top. ( I like Comstock.)

Buckwheat and Banana Pancakes, Paltrow style
Gwyneth Paltrow, actress, mother, food lover, recently launched a newsletter named GOOP. The blog-like newsletter, which contains the tagline "nourish the inner aspect," is basically a weekly compilation of all of Mrs. Martin's favorite things. The fashion icon shares tips on everything from putting together a great outfit to eating right and staying healthy. She even shares her favorite recipes, which is, in my opinion, the best part of the whole thing! A couple of weeks ago, she offered up a recipe for vegan buckwheat and banana pancakes that sounds wonderful! GP describes them as a "combination of nutty buckwheat and sweet, sticky banana." Yum! I think most people are either waffle fans or pancakes fans, but very few like them both equally. I'm definitely on team pancakes, and banana pancakes are one of my favorites.Right now, GOOP is only available via e-mail, but there will be an archives section added to the site soon. See below for the complete pancake recipe and, to subscribe to GOOP, click here.
SERVES: 3 or 4 (makes about a dozen pancakes)
TIME: 15 minutes
1 1/4 cups soy or rice milk
1 tablespoon lemon juice
1 tablespoon vegetable oil
1 tablespoon maple syrup, plus more for serving
1/2 cup buckwheat flour
1 teaspoon baking soda
1/2 cup unbleached all-purpose flour or white spelt flour (substitute rice flour to make pancakes completely gluten-free)
1/2 teaspoon salt
2 bananas, thinly sliced
Mix all the wet ingredients together in a small bowl. Mix all the dry ingredients together in a slightly bigger bowl. Add the wet to the dry and stir just enough to combine – be careful not to over-mix (that’s how you get tough pancakes).
Heat a large nonstick skillet or griddle over medium-high heat. Ladle as many pancakes as possible onto your griddle. Place a few slices of banana on top of each pancake. Cook for about a minute and a half on the first side or until the surface is covered with small bubbles and the underside is nicely browned. Flip and cook for about a minute on the second side. Repeat the process until you run out of batter. Serve stacked high with plenty of maple syrup.

LARABAR: Yummy and good for you!
Larabar, creators of what have to be the world's healthiest fruit and nut bars, have recently introduced two new flavors, both of which are, like their previous snack bars, inspired by classic desserts. The two new additions, Peanut Butter Cookie and Coconut Cream Pie, fit in nicely amongst the older bars like Banana Bread and Cinnamon Roll. For those of you who don't know, Larabars are made of all natural ingredients. There are only a handful of ingredients on the wrapper and you'll be able to pronounce and recognize each one! That's because there are no added sweeteners or chemicals in Larabars AND, for those of you shun dairy products, they're vegan! I tried the Coconut Cream Pie bar last night and I have to say, it may be my new favorite flavor! It was pretty tasty. Don't get me wrong; It's not a candy bar, if that's what you're craving, but it is a pleasant and healthier alternative. For more information, click here.

Achatz Pies

Achatz pies are, quite literally, the best pies in Michigan! Okay, so they are the best pies in metro Detroit. I don't really know what's going on in the rest of the state. Seriously, these pies are the best! While Achatz is famous for its award-winning four berry pie, I have to say that the banana split concoction is my favorite. It's orgasm inducing! Hey, I take it where I can get it, even it is from a pie. Unfortunately, my fave is not available by mail order, but many of their fruit pies can be delivered straight to your doorstep. Click here for details.
