Sweet Testing: Lime Tarragon Cookies

I would like to start this post by stating that I hate licorice. I don't just hate it. I loathe it. If I were forced to eat  licorice by some evil, licorice loving bad guys, I'd probably make a multitude of face distortions while chewing and then, overcome with nausea, end up spitting it out, which would surely get me in trouble with the evil, licorice loving bad guys! That said, I do, for some strange reason, LOVE tarragon. That's right, I enjoy eating an herb that is often described as having a licoricelike flavor. Don't ask me to explain. I can't. All I know is that I love tarragon and I loved these cookies! They have a nice buttery flavor, which is very reminiscent of shortbread. The tarragon is subtle and the lime is refreshingly different. You know that I'm all about atypical recipes and experimenting with a savory spin on a dessert is always super fun!

One small note: These cookies are supposed to be much smaller and thicker. Mine spread out. This may have been because I used gluten-free flour or maybe because I didn't chill the dough for long enough. (Sometimes, I get impatient during the chilling and just charge ahead!) They were still delicious, but don't be alarmed if they look different than mine! ~Erin

Sweet Testing: S'more Nut Bars with Smoked Chocolate Chips

Nothing says summer like grilling. Traditionally a meat centered event, grilling has expanded over the years to include everything from lettuce to pizza to chocolate. Chocolate? Yep, that's right. Autumn Martin from Hot Cakes Molten Chocolate Cakery in Seattle has created her own line of smoked chocolate chips! The semisweet chips, which are cold smoked over alder wood for ten hours, actually taste and smell like a campfire. After I finally managed to get my hands on some, I couldn't stop opening the jar and inhaling the warm woodsy aroma inside. What was I going to make with my new discovery? S'more bars, of course! There are many creative ways you could use these chips, but I felt that a dessert that is already known for being smoky would be the perfect way to showcase the chocolate.

You can order Smoked Chocolate Chips via the Hot Cakes website, right here. If you would like to try making the chips on your own, check out Autumn's cookbook, Malts and Milkshakes, which contains instructions on how to smoke the chips, along with tons of unusual milkshake recipes, including Smoked Chocolate and Scotch Shake, Salted Black Licorice Shake, Tamarind Shake, Passion Fruit Creamsicle Shake, and Blackberry Lavender Shake.

Sweet Testing: Lemon-Almond Meringue Tarts

I’ve been wanting to make these lemon tarts ever since I bought the first Baked cookbook, Baked: New Frontiers in Baking, back in 2008. The tarts were featured on the cover of that book, and they looked, well, they looked *amazing*! I immediately bought some tartlet pans on Ebay in preparation, but, somehow, I never got around to making these lovely tarts until recently. I have to say, I was quite pleased with how they turned out. These little tarts are definitely a feast for the eyes, like tiny dishes of sunshine and a perfect dessert for summer! If I made them again, though, I’d make one little change. The tarts seemed a teeny, tiny bit, uhhh…tart, to me, although others told me that they were perfect. I tend to be my own worst critic, so I’m not sure if I would have noticed it if someone else had been doing the baking. It could have been my imagination. I would probably try using Meyer lemons in the future, though, which are a little less tart than regular lemons. Other than that, these were a delightful change from my usual baking repertoire. Quite fun to make…and eat!

Sweet Testing: Mississippi Mud Pie (aka Mississippi Mud Cake)

I love this cake. I love this cake so, so much. It is, in my opinion, one of the best things I have ever made! That said, I will admit that it’s not a cake for everyone. There are not one, not two, but three layers of chocolate in this cake (crust, cake, pudding) and it probably isn’t the best choice for a person that doesn’t like rich desserts. Frankly, I don’t understand the phrase “too rich,” but everyone has their own limits. At my table, there were people who couldn’t finish one piece, while others ate two. To me, it was all together delicious, a chocolate lovers dream. That said, there are a lot of elements to this cake, so you will be spending a lot of time in the kitchen. Luckily, each of the elements are fairly simple to make, so the process won’t be stressful, just time consuming. You can find the complete recipe for Mississippi Mud Pie after the jump. ~Erin

Sweet Testing: Whiskey Tart with Whiskey Whipped Cream

I know that I’ve mentioned before on this site that I love Baked, the New York—based bakery that has spawned a series of amazing dessert cookbooks, but I don’t know if I ever talked about my love of whiskey. Yep, that’s right, whiskey. I’m not a big drinker and, honestly, I didn’t even start consuming alcohol until a few years ago, but it was whiskey, friend of the Irish for centuries, that ended up converting me. I think it tastes a bit like ginger ale, but, really, I’m still pretty much a lightweight, so what do I know? I just like it. And whiskey and chocolate…even better! To further entice you into my whiskey world, I will add that this tart is not only delicious, but a cinch to make, so you can impress your friends and family with very little time and effort. Always a good thing! ~Erin

Sweet Testing: Bananas Cake

About a month ago, I predicted that I would soon be making this cake, and, like a well-trained Kreskin, my prediction became manifest when I baked this mound of banana chocolate deliciousness for my very own birthday! Well, really it was a co-creation between me and my mom, due to it's complex nature. It is, by all accounts, mine included, a damn fine cake, but it is time consuming. (Just time consuming, not difficult.) It comes from the new Baked cookbook Baked Elements and it contains not one, not two, not three, by four different parts (cake, filling, icing, glaze). I recommend splitting it into two days or getting a co-baker/sous chef to help you out. I promise; It will be worth the effort. I mean, come on, it's banana + peanut butter + chocolate (squared). What's not to love??? Actually, it reminds me a lot of the peanut butter and banana sandwiches that I used to have as a kid (and sometimes as an adult), but, you know, with chocolate added. So good!

Cookbook Excitement: Baked Elements

Wednesday was the best . . . day . . . EVER! Why was it the best day EVER? Well, I’ll tell you. Because the angels over at Stewart, Tabori & Chang sent a copy of the new Baked cookbook, Baked Elements, right to my door! I’ve been a fan of this Brooklyn-based bakery since before I could talk (okay, really since they released their first cookbook back in 2008) and every time they release another book, I nearly pee my pants in anticipation. And, I have to say, the new book does not disappoint.

Good Morning Sunshine Bars

This time around Matt Lewis and Renato Poliafito have given us a cookbook based around the concept of “our favorite ingredients.” What makes their Top Ten? Peanut Butter, Lemon and Lime, Caramel, Booze, Pumpkin, Malted Milk Powder, Cinnamon, Cheese, Chocolate, and Banana. All of which just so happen to be my favorite ingredients as well! Divided by ingredient, there are 10 sections to the book, making it easy to find and select a recipe. Interested in making a banana dessert? Just flip to the banana section and drool away! Personally, I don’t know even where to begin. There are so many recipes that I want to make. I may have to start with the Easy Candy Bar Tart, though. Caramel, walnuts, dark chocolate. I took one look at the accompanying photo and thought, Holy shit! That said, the Bourbon Milk Shake is also calling my name and, as I am a huge fan of bananas, I can’t wait to sink my teeth into the Banana Cake featured on the cover. (Btw, the Peanut Butter and Banana Creme Pie in their last book was divine). With photos by the talented Tina Rupp and 75 mouth watering recipes to choose from, I think this cookbook will be keeping me happy for decades to come . . . or at least until they release another book. To find out when the fabulous Baked boys will be at a Williams Sonoma near you, click here. You can purchase Baked Elements: Our Ten Favorite Ingredients online, right here.

Sweet Testing: Rosemary Apricot Squares

I have a confession to make. I was a little bit nervous about making these Rosemary Apricot Bars. I ate one at Baked a couple of years ago and fell in love with them, but I wasn’t sure how other people would feel. Apricot and rosemary isn’t really an obvious dessert choice. So, given my apprehension, I was pleasantly surprised when person after person (at my sister's wedding shower) came up to me to tell me how much they liked them!! Woo hoo! They really are good. With just the right amount of tang and not too much sweetness, they are the perfect bar for when you want to make a dessert that makes you feel, just a little bit, like a grown-up.

Sweet Testing: Mississippi Mud Pie (aka Coffee Ice Cream Tart)

Baked has done it again! I made this tart for my sister’s bday, and, like everything I make from Baked, it was a huge success! I really loved it and I don’t even like coffee or coffee-flavored things! I actually thought about switching out the coffee for vanilla, but, because this was for my sister, and not for me, I went ahead and used the coffee flavor. I have to say, I was pleasantly surprised. I didn’t think the ice cream had an overly strong coffee flavor (I used Trader Joe’s brand), and it didn’t offend my palate in the least! So, even though you could swap the coffee ice cream for some other flavor, I would give the coffee a chance. It might not be as bad as it sounds!

2) There were some ice crystals in my finished product. I think this was either from the ice cream melting and then freezing again or from the fact that I neglected to cover the tart at one point when it was in the freezer. Anyway, I just wanted to point out that you shouldn’t let the ice cream thaw too much and be sure to follow the directions and cover it while it’s in the freezer!

But, despite the tiny bit of ice crystal crunchiness, everyone really loved this tart. I’m sure your friends and family will too! You can find the complete recipe after the jump.

Sweet Testing: Grasshopper Cake

I swear this isn’t another Baked cake. It has nothing to with Baked. It is a completely unrelated dessert that has absolutely no connection to a particular bakery in Brooklyn known for their mega super delicious treats. Okay, that’s a lie. It is, in fact, a Baked cake. I’ve been thinking of adding a Baked tag to all my Baked recipes because I’ve made so many of them. I can’t help it! They are always good! I was particularly happy with the way this one turned out. It’s like a thin mint cookie in cake form! Actually, it’s better than a thin mint cookie and I really like thin mint cookies. One person told me that it was the best cake that I had ever made, but I usually hear that from at least one person every time I make a Baked cake. I’m telling you, they are just that good!

Sweet Testing: Almond Green Tea Cupcakes

I have come to realize something about myself. I love almond flavoring! I only came to this realization recently, after eating these green tea and almond cupcakes from Baked, but, from now on, I am all about eating anything flavored with almond! Actually, this new found epiphany is not really surprising, given the fact that I eat almonds every day, but as much as I love real live almonds, I don’t know if they can take credit for the yumminess of these cupcakes. I think it’s the more intense almond extract that does the trick. Whatever it is, I think these may be the best cupcakes I’ve ever made! They were definitely a nice change over more traditional chocolate/vanilla cupcakes. Oh, and the green tea taste is very subtle, so if you’re not a tea lover, I wouldn’t let that stop you from trying these! So good!

Sweet Testing: Aunt Sassy Cake (Pistachio Cake with Honey Buttercream)

It’s official. My Baked obsession has started to infect other members of my family. Recently, when my mother had to make a bday cake for a friend, she told me that she wanted to make something from Baked and asked if she could borrow my cookbook, Baked Explorations. I, of course, was more than happy to oblige, as long as she saved me a piece! The dessert she ended up choosing was Aunt Sassy Cake and I’m so glad that she did because I’ve been wanting to try it every since I got the cookbook! I’m a huge pistachio fan, so anything with this particular nut is right up my alley. The cake itself was light and buttery and reminded me of the cakes my mom used to make when I was little. It has a very homey quality that I love. Oh, and when I say it’s light, I mean that in the sense that it’s not a rich chocolate cake, not light in terms of calories. I mean, it’s a three-layer cake. There is no such thing as a calorie-light three-layer cake! And if you happen to see one, I wouldn’t recommend eating it! Better to eat a small piece of this cake, than a large piece of a factory made “lite” one.

Sweet Testing: Chocolate Coffee Cake with Dark Chocolate Ganache

I’ve always wanted to make a drippy cake. (I know that’s not the technical term. Is there a technical term?) For some time now, I’ve been obsessed with cakes that feature dark, chocolaty drips down their sides, so when I saw this cake in the new Baked cookbook, I knew that I had to try it! I’ll admit it. I was a little intimated. I am no Martha Stewart when it comes to presentation, but I think it turned out really well! And it was delicious, too! Seriously yum! It was definitely worth the effort. If you’re not a fan of coffee flavored sweets, have no fear. The coffee flavor is really subtle . . . and I hate coffee.

Sweet Testing: Salt & Pepper Tree Cookies and Peppermint Deer

I love the holidays. I’ll admit, the preparation stresses me out, but the actual celebration, is always my favorite time of the year, so when Urban Outfitters asked me to contribute a holiday recipe for their blog, my mind immediately started swimming with ideas! At the time, I had just gotten the new (and fabulous) Baked cookbook, Baked Explorations, and I was itching to try one of the recipes. It didn’t take me long to select their salt and pepper sandwich cookies for the first half of my post, and, boy, was I glad that I did! These cookies are amazing. I literally took one bite and then, for a minute straight, said nothing but, oh, my god, these are so good. Oh, my god, these are so good. OH, MY GOD, these are sooo good! They were really flavorful, like a little party in your mouth. Everyone else seemed to love them, too. Well, except for a friend of mine that doesn’t like salt, but he’s a weirdo.

For the second half of my dessert, I went straight to my mom’s recipe for white chocolate peppermint bark. My mom has been making these yummy treats for xmas since I was little and they always bring back such fond childhood memories. I changed it up a bit by using deer molds, instead of the traditional bark form. I hope you enjoy it! [A special thank you to my mom, MB, and Tiesha for taking the time to help me out!] To view the Urban Outfitters post and step-by-step photos, click here. You can find the recipes after the jump.

Sweet Testing: Red Hot Velvet Cake with Cinnamon Buttercream

Yes, it's true. It's another Baked cake. I know. You're shocked, right? Actually, I've been wanting to make this cake ever since I first got Baked: New Frontiers in Baking. Every time a birthday or a holiday or some other cake-required celebration comes around, I put it on a list of suggestions and it always gets overlooked! So, when I was asked what kind of cake I wanted for my bday, I immediately picked this one! And I was so glad that I did! So, so yummy! One cake eater/red velvet fan said that it was the best red velvet cake that she have ever had! I have to admit, though, that I liked it a whole lot better the next day. The cinnamon seemed much stronger. I don't know if that's because the flavors needed time to percolate or if I had just eaten too much food prior to cake time. Then again, I often tend to like baked goods more the next day, but that's just me and my weirdness.

Sweet Testing: Peanut Butter Banana Cream Pie

I have had a craving for a Peanut Butter and Banana Creme Pie for a long time, ever since I first heard about it last year, so I was really happy when my father picked this as his dessert of choice during a recent visit. I was doubly happy when I searched the internet for a recipe and discovered that my favorite bakery, Baked, has their own version of this delicious treat! And let me tell you . . . it was soooo good!! I cheated a little bit and used a Whole Foods brand gluten-free pie crust, which I highly recommend for people with gluten allergies. Usually, I don't really care for store bought pie crust, but this one is a definite winner AND it's gluten free! So, because I wanted to make the pie edible for people with gluten allergies and because I was short on time, I didn't end of making the vanilla wafer crust that goes with this recipe, but I'm sure the pie would be even more amazing with that added element, although it was pretty damn good without it! For that reason, I can't really speak to the ease of the crust preparation, but the filling was super easy to assemble and came together quite quickly. Easy and a total crowd pleaser. What's better than that?

(p.s. For Baked fans, another teaser video for the new cookbook has been released. It features one of my favorite things: baked goods with miniatures. To watch it, click here.)

(p.p.s. Sometimes I feel like every recipe I make is from Baked. Someone seriously needs to hide their cookbooks from me!)

Chipotle Cheddar Biscuits

I know that right about now you're probably thinking, Erin, a chipotle biscuit doesn't really qualify as dessert. At first, I was thinking that exact same thing, but then I changed my mind. Here's why.

1) This recipe is from the Baked cookbook and 99% of the recipes in that book could be served as a dessert.

2) Biscuits are pretty much a dessert food. I mean they are a fairly large component of strawberry shortcake, which is undeniably, a dessert.

3) Biscuits are usually eaten with breakfast, most often with a sugary jam on top, and let's face it, unless you're eating bacon and eggs, breakfast is basically dessert.

So, there you have it. Even though we ate these biscuits during a meal and not after it, I think I've made a pretty strong case for including them on the dessert menu. The biscuits themselves were mighty yummy. The chipotle giving them a nice, comforting, smoky flavor. The only thing I would change the next time around would be to maybe use a little less chipotle powder. Baked actually recommends using less spice, if you don't have much heat tolerance. I went with the full dosage, and the chipotle powder that I used was fresh, so the biscuits ended up being a little too spicy for me. That said, they were so yummy that the fact that my mouth was a little burny didn't stop me from eating three of them! I just think it would have been a little more enjoyable with less powder, but it all depends on what you can handle.

Let's Get Baked

I love this little teaser video for the new Baked cookbook, Baked Explorations, due out in October.

a) Their first cookbook, Baked: New Frontiers in Baking, is my most favoritest cookbook in the whole wide world, so, of course, I'm just a little bit excited about the new one.

b) I love Olivia Newton-John. Really, who doesn't?

I was such a big ONJ fan as a kid, that, as an adult, I actually once said to someone "You’re a fake and a phony and I wish I never laid eyes on you." Yes, sometimes, I have the maturity level of a ten-year-old. Actually, now that I think of it, he may be the one person on the planet who doesn't like Olivia Newton-John!

Pumpkin Chocolate Chip Loaf

This post will be short and sweet because I've already written so many posts about the Baked cookbook! I'm a HUGE pumpkin fan, so it's not that surprising that I would like this one, although I did make pumpkin bread last year, using a nonBaked recipe, and I was really disappointed. This, on the other hand, was delicious! Yum from the first bite!

Sweet Testing: Peanut Butter Cookies with Milk Chocolate Chunks

I don't know what it is, but sometimes I enjoy the things I bake more the next day. Maybe I spend so much time in the kitchen that by the time the cake/cookies/whatever comes out of the oven, I'm pretty much sick of them. Maybe I put too much pressure on myself and the food that I'm bound to be disappointed once I finally get around to taking a bite. Maybe, sometimes, foods just need to rest a bit in order for the flavors to really settle in. You know, like how soup is better if you make it the night before. Anyway, these cookies were definitely a better the next day kind of thing for me.

I made these classic goodies for a party and almost didn't bring them because I thought they were so boring, but the next day and the day after that . . . and the day after that, I couldn't stop shoving them in my mouth! I'd plan on eating one and end up chomping down five, one after another! This recipe made A LOT more cookies then I expected, so I brought the leftovers to work and they were quickly gobbled up. People actually came back for more, so they must have been fairly good, right? I know. This whole post is not exactly ending up as some huge ringing endorsement, but they're easy to make and they're tasty.

After writing this post, I came across Carolyn's review of these cookies on Food Gal and quickly realized that my big mistake was using chocolate chips instead of chopping the chocolate myself. I usually follow instructions, but I was short on time and I didn't think that it would make a huge difference. Apparently, the chopped chocolate transforms an ordinary cookie into something more like a peanut butter cup! So, there you go! I'm sorry Baked for not listening to you! It won't happen again! :-)
